National Sandwich Day: Sweet Dreams Are Made of Cheese

In honor of National Sandwich Day, which falls on Nov. 3, HealingRadius can’t imagine being anywhere but here, talking about sandwiches and sharing recipes that hopefully meat all of your eggspectations.

Watching out for our health doesn’t mean that our food options must be mundane or unexciting. In fact, they can be quite the opposite! Meat? Throw in some fresh turkey or chicken breast. Cheese? Well, where to begin? There are so many health-conscious cheeses that are packed with calcium and protein, including Swiss, Brie, blue, mozzarella, cottage, and goat cheese. And the toppings? Oh, we can go on and on—cucumber slices, tomato slices, eggplant slices, bell peppers, baby spinach, lettuce, apples, and pears.

Grilled Portobello and Goat Cheese Sandwich

 

Ingredients for four servings:

1/4 cup balsamic vinegar

1 tablespoon olive oil

1 garlic clove, minced

1 red bell pepper cut into 4 and seeded

1 yellow bell pepper cut into 4 and seeded

1 zucchini, sliced lengthwise

4 portobello mushroom caps

4 2-ounce containers goat cheese

2 tablespoons skim milk

4 ounces Kaiser rolls, cut in half horizontally

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

Salt and pepper

Cooking spray

 

Instructions:

  • Set grill to medium-high heat, spray with cooking spray, or line the rack with foil.
  • Combine the first seven ingredients (balsamic vinegar through portobello mushroom caps) in a large bowl, season with salt and pepper to taste, and toss with hands to coat evenly.
  • Place vegetables on grill, reserving excess vinegar mixture. Flip zucchini after 3 minutes and cook for another minute. Remove to cool. Flip remaining vegetables after 5 minutes and drizzle with remaining marinade. Cook another 4 minutes or until tender. Remove from grill and cut peppers and zucchini into bite-size pieces.
  • In a small bowl, combine goat cheese and milk, stirring until cheese is thinned and smooth. Spread 1/4 of the goat cheese mixture on each roll, place one mushroom and layer the rest of the vegetables on each, and then 1/4 of the herbs.

 

Grilled Eggplant Panini

 

Ingredients for four servings:

2 tablespoons low-fat mayonnaise

2 tablespoons fresh basil, chopped

2 tablespoons extra-virgin olive oil, divided

8 1/2-inch-thick eggplant slices

1/2 teaspoon garlic salt

8 slices whole-grain country bread

8 thin slices fresh mozzarella cheese

1/3 cup sliced jarred roasted red peppers

4 thin slices red onion

 

Instructions:

  • Preheat grill to medium-high heat.
  • Combine mayonnaise and basil in a small bowl. Using 1 tablespoon extra-virgin olive oil, lightly brush both sides of eggplant and sprinkle each slice with garlic salt. With the remaining 1 tablespoon oil, brush one side of each slice of bread.
  • Grill the eggplant for 6 minutes, turn with a spatula, top with cheese, and continue grilling until the cheese is melted and the eggplant is tender, about 4 minutes more. Toast the bread on the grill, 1 to 2 minutes per side.
  • To assemble the sandwiches, spread basil mayonnaise on the four slices of bread. Top each with the cheesy eggplant, red peppers, onion, and remaining slices of bread. Cut in half and serve warm.

 

Turkey, Green Apple, and Brie Sandwich

 

Ingredients for four servings:

2 tablespoons Dijon mustard

2 tablespoons honey

4 Kaiser rolls

8 ounces brie, sliced into 4 equal parts

12 slices deli turkey

1/2 green apple, cored and thinly sliced

 

Instructions:

  • In a small bowl, combine the Dijon mustard and honey and mix until smooth.
  • Cut the rolls open horizontally and spread the bottom side with 1/4 of the mustard mixture.
  • Layer on 4 slices of the turkey, 2 ounces of Brie, and 1/4 of the apple slices.
  • Enjoy!

 

Making healthy and delicious sandwiches can actually be deemed an art, a hobby, and a fun and interesting way to consume enough protein, calcium, and nutrients to keep you goin’ throughout your day.
